Tofu Chili

1 1/2 large onion chopped
2 garlic cloves minced
1 pkg ground tofu original flavor or crumbles (opt)
One 6 oz can tomato paste
One 14.5 oz can tomatoes drained and chopped
2 tablespoons savory power
1/2 teaspoon ground cumin
Sea Salt to taste

2 cups water
1 tablespoon lemon juice
1 tablespoon Bragg’s Liquid Aminos
Two 15 oz cans black beans, drained and rinsed
Two 15 oz cans of kidney beans, drained rinsed
Soy Cheese (op)

(I put canned ingredients here for ease of time. When possible cook from scratch! Fresh beans are cheaper and healthier for you)

In a large saucepan, heat the onion, and tofu, if using, in a small amount of water on the stove, about 5 minutes. Add the spices and cook about 1 minute. Add the tomato paste, tomatoes, and 2 cups water. Simmer for 30 minutes, adding more water if needed to achieve the consistency you want. Add the lemon juice, garlic, and beans, and simmer for another 15 minutes, adding water if needed. Top with soy cheese or soy sour cream.
