Tsimmis Recipe

This is a family favourite! We always have this in the fall since it is such a great harvest dish. Enjoy!

Ingredients:
1 large sweet potato
2 large carrots
6 red/white potatoes
1 cup prunes (raisins can be substituted, see NOTE)
1 cup orange juice
1 teaspoon lemon juice (optional)
1/4 cup brown sugar (optional)

Directions:
1. Chop up all vegetables and place in covered cooking pot
2. Pour in orange juice, brown sugar and lemon juice (if using) and mix together
3. Put in oven at 350C for one hour

NOTE: if using raisins let raisins soak in water for 15 min prior to cooking so they can absorb some moisture
